Pitahaya grows in the tropical zones of the Andes. The plant is a cactus of long triangular stews. Its flower has spectacular beauty.
The fruit is green in the first stages, and turns yellow as it ripens. The pulp is white and watery, with many and small seeds.
When fresh, the pitahaya can be considered an extremely tasty portion of sweetened water, boosted with phosphorus, calcium and vitamin C. Usually it is consumed by itself.
The pitahaya skin has many black dots, which are perfectly normal. It is very resistant, protecting the delicate pulo inside.
To select a pitahaya, look for the intense yellow color and a firm skin. When the pitahaya begins to wrinkle, it is better to consume it as soon as possible. It lasts longer when cooled in the refrigerador.
